We pace our evenings deliberately: courses spaced to allow conversation to find its second and third wind, music that rises rather than fills, and a deliberate refusal to rush the space between plates.
Slow dining asks something of guests — attention, presence, patience. In return it gives back the only thing that makes an evening memorable: the feeling that nowhere else needed you.
